If all the cooks from ports of the world...
The Earth separates men, the Sea unites them.
Men and women who cook before the horizon with a vegetable garden behind them are united by a multitude of sensations, forces and impressions, and perhaps simply by the maritime culture: that of respect for natural elements such as the swell and wind, of solidarity faced with the isolation of having your back to the ocean.
Very often, they or their ancestors landed on this coast, and they may already be dreaming of travelling to the other side - to the other side of that horizon whose magnetic attraction tickles their imagination.
The cook expresses, before all else, his natural environment: the sea. He knows of all its riches, its shellfish and fish, crustaceans and algae but also its seasons, weather, tidal range and especially its great fragility. Whether the coast is Indian, Chilean, Lebanese or Breton, they all have the same pantry and have experienced beauty.
To protect humanity we must preserve the sea; it feeds more than the earth. There is a big difference between the foods of the earth and sea; most of the former depend on man through cultivation and breeding, while the latter are mainly wild - marine game.

Linked to this marine universe, these cooks who have never completely identified with a region differ already from those who work inland, a few kilometres away. Great marine cooking has never had borders and is therefore very contemporary. Sailors have always introduced that which is different, new ways of doing things, other cultures and civilisations.
Travel brings people together and the first exchange, after eye contact, is food. Eating what the other appreciates is a way of accepting, understanding and loving him. Marine cooking is more natural and outward-looking than any other kind.
The goal of this movement, or rather this breeze, is to carry the cooks who are linked by these abyssal currents, in the knowledge that each can find on his shore a bottle from afar filled with different seeds, spices and perfumes and think of a new way of cooking for himself and for others. May this breeze travel far...
