- Lilacs in blossom: Thin strips of cuttlefish caught fresh every evening, spring shoots with angelica oil and wild herbs
- Oysters, new potatoes, light cream with morel mushrooms and a touch of “Gallo Powderâ€
- Lobster with cocoa, Guajillo pepper and sherry (homage to Touche de la Ravardière, the 17th century Cancalese captain).
- The classic John Dory fish with “Back from the Indies†powder (in honour of the 18th century admiral, La Bourdonnais).
- Gently cooked sea bass, “Elderberry oil†and a hint of springtime
- Valentine’s Brittany and Normandy cheese board served with chutneys and condiments.
- Trolley of delightful and reassuring sweets prepared by Mathieu.
- “Land in sight†grog from the Islands.
So that the meal unfolds smoothly, it is preferable that this menu be served to everyone at the table, for maximun 12 persons.
