Every Saturday morning I head for Lices market in Rennes. It's as if all of Brittany converged here in this crooked square, an open clearing among the maze of medieval streets, to offer the best.

And they are all there, those who supply me with marvels: the circle of regulars whom I count on every week, the region's grandmothers - my real friends who know what I want - herbs, roses, high quality vegetables and fruit.

Yves Bocel and his son tempt me with thin leeks, onions, four-season lettuce, cherry tomatoes, turnips, carrots grown in sand, very round lamb's lettuce, Annie Bertin prepares the herbs and aromatic plants that are so essential to my cooking, and there are many others...
