Take a walk and step around the first daisies and tiny crocuses, then try some of the foreshore tidewater shellfish, the season's nicest scallops and the beautiful flatfish, each lightly seasoned with the spice blends of maritime adventure such as our "Poudre d'OR". Treat yourself to a dinner for two from the "Choice Morsels from the Sea" menu served in the dining room at the Châteaux Richeux, a night soothed by the songs of the wind and the sea in the Cottage Les Rimains or the Châteaux Richeux, and and a special Brittany-style breakfast, before going out to explore the Cancale Bay and walking along the Chemin des Douaniers (Old Customs' Path). The Soft Moon Breezes of Spring With a joyous scent, a dionysiac ruby red and an invigorating flavour, this nectar was created with the fairies of Brocéliande and was inspired by the strength of the forest, the magic of the stars and the excitement of nature. I designed this lightly spiced herbal tea by the light of an early moon, letting myself be carried away by my dreams. Personally, I enjoy it in many different ways: hot, at my desk in winter, to chase away a chill; warm, to revive my energy in the afternoon; and iced, whilst sitting in the back garden in summer. >>

Even Further in Defense of Marine Resources For the third consecutive year, SeaWeb and the Ferrandi school have organised the Olivier Roellinger competiton, which promotes the preservation of marine resources. Highlighting the value of sustainable fish and shellfish by calling out to students and young professionals are two goals that for me, go hand in hand. The message is important to young generations, who are deeply aware of the need to act to protect our marine resources. Each one develops his or her own place, and voice, in the fight. Through the competiton we are able to encourage chefs, who have a particular responsibility and a voice to be heard, by rewarding them for ecological responsibility, inventiveness, and audacity.
Furthermore, so that these committed young professionals may continue to communicate, share and cook in responsible, aware, and sustainable ways that reflect their experience and their experiments, we have created the "Equipage des Cuisiniers de la Mer". Twenty-nine laureates and finalists from previous years are brought together with a team, and the members develop a communal voice to express their new, mature culinary vision and their commitment to the preservation of the oceans.
