During this magnificent month of November, the fairies, of which there are many in Brittany, come and whisper secrets in our ears. Among these is our Fairy powder made of mace, lemon zest and cinnamon, which transforms autumn soups and bouillons… Otherwise, the fleurs de sel protected and harvested by Lionel have inspired new culinary adventures. Mist flower – a marriage of fleur de sel from Guérande, taloma (similar to Sichuan pepper) and lemon zests – brings the infinite within reach like a horizontal chasm, and proves stunning on potatoes, a little fromage blanc and a few spinach leaves barely cooked in butter, or on raw or cooked scallops.
The holiday season is coming up and we have imagined gift boxes, an invitation to adventure and culinary voyages, which I’m certain will lead to many pleasurable meals!
